This Week at the Market....

TODDY POND FARM

Honey Ginger Brined Pork - from the Grassfed Gourmet Cookbook by Shannon Hayes (one of our favorite cookbooks)

This is the perfect recipe for enjoying a beautiful farm raised pork roast!  The brine is made, defrost the roast right in the brine (in your refrigerator) and then bake the roast any time in the next 3- 7 days! The longer the roast brines, the more pronounced the brine flavors will be.

This roast is so tender, juicy and flavorful. Delicious with frost sweetened winter greens and roasted winter squash!

Serves 4 (or more depending on how big your appetite!)

Recipe:

Approximately 8 cups water

1/2 cup coarse salt

1/2 cup honey

3 slices fresh ginger(quarter size)

2 large cloves of garlic

Zest of one orange- cut off with veggie peeler in wide strips

1 tablespoon coriander seed

1 TBSP freshly ground black pepper 

1 TBSP mustard seed

1 bay leaf

1 3-4 lb pork (loin, ham, butt) boneless roast from Toddy Pond Farm!

Heat 1/2 water to boil.  Remove from heat, stir in salt and honey till dissolved.

Add remaining brine ingredients (not the pork yet!)

Add remaining water (cold)

Cool to room temperature. Transfer brine to container large enough to hold roast.

Add roast, weight with a plate (or whatever cover trick you come up with) to keep submerged. Move to refrigerator.

Brine 3- 7 days.


Preheat oven to 400 degrees

Remove roast from brine.  Wipe dry. Roast 15 min.

Lower temp to 300 degrees.

Roast until internal temp is 145-155 degrees (approx 20-22 min a lb)

Remove from oven. Tent with foil. Rest 10 min. The internal temp will continue to rise another 5-10 degrees.

Slice and serve!

Thanks to everyone who braved the howling winds to visit us last week at Aubuchon! It was wonderful to be inside, and we look forward to seeing you every week. We were among the lucky ones last week during the storm — we did not lose electricity and did not suffer any major losses at the farm. We’re busy buttoning up and battening down for another challenging Maine winter. This means we tighten up the barn so the goats have shelter, stockpile as much hay and feed as we can to feed them in case we can’t get out, tune up the snowblower, and locate the snow shovels. If we’re lucky, we’ll find a winter apprentice to help us with the heavy lifting. Unlike growing field crops, livestock care is 24/7/365. The goats will be dry for the winter in just a few more weeks, as they go on maternity leave in anticipation of kidding season in March. We have a lot of goat cheese stockpiled to get us through. Thanks to jersey milk from Springdale Farm, we continue to make cheese through the winter, although at a reduced schedule. Just a reminder that we would be happy to help you plan your holiday cheese plates, and we do offer gift certificates for holiday gift giving.

Belfast Farmers' Market Needs Your Help!

VOLUNTEER OPPORTUNITY
Do you have 2 hours available on an occasional Friday morning?
Do you want to support the markets' efforts to provide low-income shoppers with access to local food? Perhaps you appreciate the convenience of having the option to use your credit card at market? Maybe you just enjoy and value the Belfast Farmers' Market community and would be willing to give us an extra hand.  We are looking for a few additional volunteers to staff the market info booth this summer. Currently, we have a fabulous group of volunteers who tirelessly show up every Friday morning and work 2-4 hour shifts at the info booth, but we need more help for the bustling summer months. Volunteer duties include: welcoming shoppers, providing EBT/SNAP and credit card customers with clipboards for shopping, adding up shopping sheets, swiping customer cards on the markets' wireless machine, distributing Maine Harvest Bucks and answering general questions about the market.
No experience necessary, just a friendly and positive attitude.

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
