This Week at the Market....

DICKEY HILL FARM

It’s the weekly spinach line up!  We will be at market with greens (as well as carrots, onions and grass fed beef) this Friday, January 17 before we take a 3 week harvest break.  Because winter daylight is so limited, our greens have not grown much if at all since early November!  Our strategy with winter greens is to get them up to size by early November, harvest off them weekly until there isn’t much left to harvest... and then patiently wait for the regrowth that really kicks off in early February when daylight exceeds 10 hours again.  This three week harvest break will allow for our greens to take advantage of the ever lengthening days and growth that comes with it.  So, see you this week, January 17th and again on February 14!  Here’s to longer days and growth ahead!

APPLETON CREAMERY

Continuing on our theme of winter comfort foods, a customer gave me this serving suggestion for Twice Baked Potatoes:

4 large baking potatoes
1/2 cup milk
4 T butter
Appleton Creamery herb & garlic spread, 4 oz container
Appleton Creamery feta, about 4 oz, crumbled
Spinach

Bake potatoes for one hour. Split lengthwise, scoop out flesh. Mash with milk, butter, and goat cheese spread, and feta.
Steam spinach til wilted, chop, then mix in with potatoes. Season to taste. Stuff mashed potatoes back into potato skins.
Bake an additional 15 minutes.

For a special treat, top with bacon.

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
