Here's a delicious recipe using our whey fed ground pork - ON SALE THIS FRIDAY - $7/lb



GARLIC-CHILE GROUND PORK

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 shallot, chopped
  • 4 garlic cloves, finely chopped
  • 1 dried chile (such as chile de árbol)
  • 1 pound ground pork
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • Pinch of sugar
  • 1 cup low-sodium chicken broth
  • 2 teaspoons unseasoned rice vinegar
  • Kosher salt

RECIPE PREPARATION

  • Heat oil in a medium skillet over medium-high. Cook shallot, garlic, and chile, stirring often, until shallot is softened and translucent, about 4 minutes. Add pork and cook, stirring occasionally, until almost cooked through, about 3 minutes. Add fish sauce, soy sauce, and sugar and cook, stirring occasionally, until moisture in skillet is evaporated, about 5 minutes. Add broth, reduce heat, and simmer, uncovered, stirring occasionally, until liquid is evaporated, 12–18 minutes.

  • Remove skillet from heat and mix vinegar into pork mixture; taste and season with salt if needed.


We will have our 100% Grass Fed Dairy at the market as well - Yogurts, Fromage Blanc, Feta, and Kefir.

For meats we will be bringing our 100% grass fed ground beef, and whey fed pork - ground, sausage, chops, and roasts.

DICKEY HILL FARM

Dickey Hill Farm will be back at market this Friday with a truck load of fresh winter greens!! The spinach has enjoyed it's vacation basking in three weeks of sunny, mild weather and is fully recharged and ready to get back to work feeding the masses. Collards, too, have seen an impressive spike in growth and will be back at market in full supply along with a limited quantity of slightly more reluctant cilantro and kale. As always, we will have selected cuts of our 100% grass fed beef to round out our offerings.  

APPLETON CREAMERY

IWe were very sorry to have missed Market last week due to the miserable weather last week. But we had another reason to miss market: the first kids of the season! While the rest of the herd isn’t due for four more weeks, it’s a sign that spring is coming! And with new kids, there’s milk, and fresh cheese to follow. Also because we missed market, we have plenty of goats milk fudge and luscious Camdenbert this week.  And don’t forget our line of aged cow cheeses for all your winter comfort foods. Swing by our table for some grilled cheese bites and baby goat pics!

Our farm raised WHEY FED PORK is back!!! Bacon, sausage, porkchops, ribs, roasts & ground. We also have some water buffalo sausage available in sweet Italian, hot Italian & Garlic. On the dairy side we will be bringing mozzarella, blueberry yogurt, fromage blanc & buffeta. See you at market!!!

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
