Here's a new favorite from The Grass Fed Gourmet Cookbook by Shannon Hayes
 

Maple-Braised Pork Sausages

An easy and delicious recipe for Sweet Italian or Breakfast sausage for breakfast or dinner! It requires only a few minutes in the kitchen, and everyone you serve it to will remember it! It’s a terrific pot luck dish on its own and also great served with winter squash mashed with butter and herbes de Provence or with steamed broccoli tossed with walnuts.

Serves 5


Ingredients

  • 2 Tablespoons butter or lard
  • 2 pounds link Sweet Italian or Breakfast pork sausage or 2 lbs bulk sausage formed into 8 patties. (all varieties available from Toddy Pond Farm - $9 to $10 / lb)
  • 6 tart apples, cored, quartered, but not peeled - get them from Mueller's Fruit Farm
  • ¼ cup maple syrup - available from Brae Maple Farm
Instructions
  1. Preheat the oven to 350 degrees F
  2. Heat the butter / lard in a flameproof casserole over medium heat. Lightly brown the sausages, about 2-3 minutes per side. Remove from the heat. Cut sausages into bite sized pieces. Return to the casserole or pan you have browned the sausages in or transfer sausage and juices to a baking dish. Add the apples. Drizzle the maple syrup on the top, cover, and roast for 30 to 45 minutes, or until the apples can be pierced easily with a fork. Serve in a shallow bowl with the apples and pan sauce spooned on top.

DICKEY HILL FARM

While this weeks snow and ice may have put a definitive end to our outdoor growing season, the winter greens growing season has only just begun!

One of our favorite aspects of growing greens like spinach, collards and kale in the winter is how incredibly sweet they get as temperatures drop!  Why is that?!! Here’s the science- in typical growing conditions plants use photosynthesis to produce sugars which are then converted into starches for energy. However, when freezing temperatures hit, the plant breaks down some of those starches back into sugars and then stashes those sugars in their cells. The cells, now filled with dissolved sugar as opposed to straight water, are much less likely to burst and damage the plant when temps plummet. Good for the plants and so nice to have a sweet, healthy treat to get us through the Maine winter.

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
