This Week at the Market....

BRAE MAPLE FARM

Some of the herb seedlings that Brae Maple Farm will be bringing include Salad burnet whose leaves have a cucumber flavor and Lovage whose leaves have a strong celery taste. Our Black hollyhock seedlings are also ready.
APPLETON CREAMERY
Puff Pastry with Kalamata Olive Spread and Appleton Creamery Feta

Ingredients:

1 pkg. (1 sheet) Wewalka Puff Pastry*
Mt. Vikos Kalamata Olive Spread**
Appleton Creamery Feta
[A bit of grated hard cheese, such as Asiago (optional)]

Directions:

—Preheat oven to 425ºF.

—Unroll puff pastry and remove parchment paper.

—Roll out out slightly to fit standard jellyroll pan/cookie sheet.

—Leaving a one-inch border around edges, thoroughly prick the balance of the pastry with a fork.

—Spread a thin layer of olive spread on pastry, leaving edges clear.

—Crumble or grate feta and sprinkle over olive spread. (Add other cheese if desired.)

—Bake for 15 minutes or so until “filling” is hot and edges of pastry are puffed and golden-brown. Take care not to overbake.

—Let cool a few minutes, then cut into desired serving pieces. Good all by itself or served with a mixed-greens salad, especially including spinach.

NOTE:

*Wewalka Puff Pastry is packaged unfrozen and may be found in the unfrozen pastry/dessert sections of better supermarkets. Frozen may be used, but the need to thaw takes away the spontaneity of this olive-y, feta-y, crispy treat, made in minutes.

**Mt. Vikos Kalamata Olive Spread is available, for sure, at Micucci’s Italian Market in Portland and most likely in many other places.
APPLETON CREAMERY (CONTINUED)

One of our favorite ways to enjoy our Greek-style yogurt is to mix it with garlic scape relish and serve over salmon with fresh asparagus



Another way is to on top of pie! 

Straining whey out of yogurt reduces the tartness. Delicious substituted for sour cream in any recipe. 

TODDY POND FARM

Our plan to start back to the market on June 7th has been pushed to the 14th due to a variety of factors, the primary being that our help for the summer won't be able to start until the 10th. Until then it's just the two of us, trying to do too much as we head into what is most likely going to be our busiest summer yet. Thanks for your patience!

And if you can't wait, our farm store is open everyday self serve from 8 to 6. Fully stocked with our yogurts, kefir, cheeses, eggs, honey, pork, beef, locally made soaps and pottery, Maine spun yarn, and locally roasted coffee. Summer staffed hours and weekly open farm day still TBD.

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
