This Week at the Market....

DIG DEEP FARM

Hope everyone enjoys the sun and turn to warmer temperatures!

Friday will be our last market of the spring, but we look forward to returning next November - we may have a baby in tow, as we are expecting a new family member in late August this summer.  Thank you for a great 2018-2019 winter/spring season.

On Friday we will have pea shoots, micro greens, salad mix, cooking greens, and loads of healthy plant starts: basil, parsley, other herbs, lettuce tomatoes, and more!

Steve will not be at the market this Friday due to a death in the family. He looks forward to seeing you all at the next market.
APPLETON CREAMERY

Another rainy Friday!
So much cheese left over! Thanks to everyone who helped us move some ripe ripe ripe cheese into deserving mouths! Specials continue this week, as the weather has not improved, and sales are down. Memorial Day Weekend coming up! We have halloumi for the grill! Aged cow cheese for the burgers, feta for the salad. You can’t cookout without cheese!

Herbed Pasta with Mushrooms and Goat Cheese

INGREDIENTS
16 ounces pasta 
1 tablespoon olive oil 
4 ounces fresh mushrooms, cleaned and sliced
1 leek, cleaned, chopped 
1 to 2 cloves fresh garlic, minced 
2 tablespoons butter
Juice from one lemon 
1/3 cup Crème Fraîche or Sour Cream or Greek Yogurt
1/2 cup chopped chives 
1 cup chopped parsley 
2 ounces Appleton Creamery Classic Plain Goat Cheese, crumbled 
red pepper flakes, if desired

DIRECTIONS
        • STEP 1
Begin to cook pasta in large pot, according to package directions. Reserve about 1/2 a cup of the pasta water; set aside. 
 
      • STEP 2
Meanwhile, heat oil over medium-high heat in large skillet until oil begins to shimmer.  Add in sliced mushrooms; stir frequently 4-5 minutes or until they are lightly browned. 

        • STEP 3
Reduce heat to medium.  Add chopped leeks; cook until leeks are softened.  Stir in garlic and butter. 

        • STEP 4
Stir in 1/4 cup reserved pasta water and crème fraîche to make a light sauce, adding additional reserved pasta water for desired sauce thickness.   

        • STEP 5
Drain pasta. Add cooked pasta to pan with mushroom mixture; stir to combine.  Fold in freshly chopped herbs. Top with fresh goat cheese and pinch of red pepper flakes, if desired. Serve immediately.

ENCHANTED KITCHEN AT FIREFLY FARM / YUMBUS

Enchanted Kitchen at Fire Fly Farm will have cilantro hummus this week!! 
We don’t have a lot of cilantro, it has been pretty slow going in the greenhouse… But we will have enough for this week. The YumBus will also have a strawberry rhubarb crêpe for our crêpe special- our fresh picked organic rhubarb

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
