This Week at the Market....

BRAMBLE HILL FARM

Bramble Hill Farm will be back at market this week with plenty of oyster mushrooms.

Here’s a quick and easy recipe that can be adapted to your liking.

Pasta with mushrooms and spinach
1 lb of pasta
2 onions chopped
4 cloves garlic chopped
1/2 lb oyster mushrooms
3-4 cups roughly chopped spinach
1/2 cup cream
1/4 cup reserved pasta water

Bring a large pot of water to a boil.
In a large sauce pan on medium-low heat, saute onions and garlic until translucent. Raise the heat to medium and add your mushrooms and some salt. Saute 20 minutes or until the mushrooms looks glossy and are cooked through. Lower the heat once more to a very low setting and then add the cream.
Add pasta to boiling water and right before the pasta is done, add your spinach to the pot.
Cook spinach for 30 seconds. Drain the pasta and spinach (remember to reserve some of the cooking liquid) and add these to pan. Continue to for another few minutes and if the pan looks a bit dry add in the reserved cooking liquid.
Serve with pecorino or parmesan and crushed red pepper.

TODDY POND FARM

This big guy was born May 7th. Our first Brown Swiss calf.


We are considering integrating his genetics into our future herd as the milk from Brown Swiss cows has the ideal percentages of components for cheese making. Speaking of which - Heide has been busy in the creamery this week making Feta, Fromage Blanc and Tomme.

MAINE HARVEST BUCKS UPDATE
We just received an update from the Maine Federation of Farmers' Markets, the organization that manages the Maine Harvest Bucks program.
Now that the funding from the USDA FINI grant has been confirmed for the next three years, we will be handing out new vouchers.
We will also be able to accept vouchers with the 3/31/2019 expiration date
anytime through 2021!
