Creating a dish in Nordic Cuisine
-idea, filosofy, taste, textures, story, mis en place, presentation, serving…

In this master class we will create 3 course menu from the beginning. As a starter we will do potato served with Västerbotten cheese. We make a new skin for a potato with a edible clay. Idea is that when potatoes are crowing underground in the clay we change it to edible one. When we are thinking Nordic cooking of course we use only Nordic ingredients. Västebotten is like Nordic parmesan, rich, creamy, bitter, tasty. Its perfect match for a potato. Two other dishes we will create using same filosofias and best ingredients available in that season. Main course and dessert.
