We’ve had a busy start to the year, enjoying the last of the shooting as the season drew to a close and savouring the last game dishes until the autumn! We’re also excited to be launching several new courses, starting in early Spring. Read on for a sneak preview....

Of course, our regular courses are filling up fast, with the pig and venison butchery days proving especially popular.
Don’t forget that as one shooting season draws to a close, we start thinking about the next one, so keep an eye on our website for next season’s shoot dates and game cookery courses.

All about Spring lamb

Tim Maddams, our irrepressible head tutor, will be offering a brand new course on lamb butchery. With more and more of us choosing to rear our own lamb, or buy from a local smallholder, this one-day course will give you a valuable insight into how to butcher and cook your own lamb. Vale House Kitchen Chris Westgate ForagingOutside the cook school, we’re delighted to have seasoned forager, Chris Westgate, back to lead our foraging courses. Chris will walk you through the beautiful Somerset countryside where you’ll identify, collect and then prepare your wild finds in a one-day course designed to introduce you to the wonders of nature on your doorstep. You’ll learn to identify edible and non-edible plants and how to cook with and eat common garden weeds. Click here for dates.

The Fly Fishing Experience – 2 day course

Vale House Kitchen Fly fishingIf you’re after something a bit more energetic, our flyfishing experience is a must for even the most amateur angler. This two-day course offers the perfect introduction to the art of fly fishing at Cameley Lakes with instructor Neil Keep. Your masterclass will be followed by day’s fish preparation and cookery with our head tutor, Tim Maddams. Hopefully you’ll have caught enough fish on day one to make a feast on day two!
