The Winter Market has a new cooking demonstrator, Amy Rindskopf. Amy loves developing recipes with local, seasonal produce. She lives in Winchester and is the events manager at Wright Locke Farm. Amy will use products and produce from the market to create recipes for you to sample and make at home.
Recipe from January's Market
Vegetarian Spiced Bubble and Squeak
2 T olive oil
1 cup chopped onion
2 cloves garlic, minced
2 cups potato, chopped and boiled
1 cup shredded Brussels spouts
2 tsp Sweet, Sour, Spicy, and Savory Asian Seasoning *
Heat oil in a frying pan and sauté onion until just soft. Stir in garlic and cook until fragrant, then stir in seasoning. Add potato and cook, stirring occasionally, until just soft. Add Brussels sprouts and continue cooking to desired consistency. Eat!
