I know I'm early, but as I mentioned last month, this is one of my favorite times of year. After Halloween (I hope you had a spooky time!) Thanksgiving is my next favorite holiday. I love the spirit of the season, helping to remind all of us of the things we have to be thankful for. Oh, and the food. Did I mention the food?
In honor of Thanksgiving, I thought I would share with you the recipe for my Gingerdoodle Spice cookies. Not only are they a great little dessert after a big dinner, but they make excellent holiday presents too!
Gingerdoodle Spice Cookies
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ground ginger
½ tsp nutmeg
¼ tsp kosher salt
1 & ½ sticks butter
½ cup packed brown sugar
½ cup granulated sugar
2 tbs molasses
2 tbs maple syrup
1 tsp vanilla extract
Coating: 1 tsp cinnamon, 1 tsp ginger, ½ cup sugar (brown or white)
-Preheat oven to 350
-Whisk together dry ingredients, set aside
-Beat butter (softened) & sugar until fluffy, then add egg, vanilla, molasses & maple syrup and mix until combined
-Reduce speed to low and slowly add in flour mixture until dough forms
-Chill dough for at least 1 hr
-Roll out tablespoon sized balls
-Coat in sugar & spice mixture and place on baking sheet
-Bake for 10-15 minutes, until edges are just firm
-Let cool on a wire rack
