Recipes
Fall is dry and windy in many parts of the world, particularly aggravating to individuals with dry and cold constitutions.
Food can do wonders. Fall is a time to increase fat in the diet in order to promote warmth and combat dryness. The key is to rely on Life supporting fats. Ghee and good quality oils (olive, possibly almond and sesame) are recommended. Sesame oil can heat up the physiology. (Coconut oil is cooling – and for some constitutions may have a ‘clogging’ effect. For most individuals coconut oil is not recommended other than during the summer.)
 
A warm ‘stew’ made with ghee, good quality salt, quinoa or millet, and red lentils, along with carrots, yellow beans, and topped with cilantro and raisins makes for an attractive dish. For an ‘Italian’ flavor add in at the last minute basil, dill and similar spices. For individuals who are always cold peel and grate raw ginger on top of the stew while it is cooling 10 minutes prior to serving.
A side dish for folks with hearty appetites might be to pop mustard seeds in ghee and sauté cubed paneer and possibly cubed diakon. Top with leafy greens and cook just until tender but still dark green.
Buttermilk, or lassi with spices (and possibly a touch of honey for the uber cool folks) and flat bread with ghee and have a pleasant feast. Add home-made chutney to suit the season.

Fall Workshops and Cooking Classes
Listed below are two evening presentations and full day workshop coming up very soon in October. I’ll get the website up to date regarding workshops, cooking classes, the Aging Reversal Course at VIU and a travel presentation coming up in November and December.
 
Thursday, October 1st 7 pm -- AYURVEDA & THE  NEUROPHYSIOLOGY OF CONSCIOUSNESS – Paul Colver shares his belief that we may "court Enlightenment through Physiology."  Learn a few practical applications of Ayurveda, and experience Life being infused into physiology as we work through a breathing exercise...  Paul affirms that the body constantly rebuilds; but asks "Why not accurately?" 
Learn the concepts of Vata, Pitta and Kapha as elemental building blocks of human physiology as Paul describes the 10 main body types, and how to manage them.

Residing in Parksville, Paul Colver travelled in South America for the first half of 2015.  His fall schedule includes teaching workshops, a travel presentation, a coffee house reading, and likely an Ayurvedic Cooking Class.
He will be teaching The Aging Reversal Course: An Ayurvedic Approach to Wellness and Vitality for the twelfth time at VIU Elder College, Nanaimo, in late October, November and early December.
Paul published "The Aging Reversal Course" in 2010 (with a focus on Ayurveda and Vedic thought); in addition to a novel entitled "Before the Dawn."

Speech content:  Through breathing exercises we will explore the body’s preferred way of effective breathing.

 Breathing techniques will be presented for restful breathing; assimilating nutrition; effective exercise; cooling the physiology; warming the physiology; abundance; relief from worry, anxiety, anger etc; effective speaking; and for inviting Silence.

In the second half of the evening the focus will be on Ayurvedic Body Type and breathing exercises to keep the different body types balanced.
