Greco Pizza Opening

A new Greco Pizza restaurant is opening in St. John's, NL!  Located at 350 Torbay Road, in Torbay Road Plaza, the owner hopes to be opening the restaurant sometime this month.

Portable Butane Stove
We carry Iwatani's Portable Butane Stoves as well as the accompanying canisters of butane.  Model ZA-3-HP boasts high power, piezo-electric ignition, and Iwatani's patented heat panel system which correctly maintains constant pressure as the fuel is consumed and allows the stove to utilize the entire can of butane leaving no residual unused butane fuel, assuring greater economical and environmental standards.  Speaking of standards, it is Canadian Standards Association (CSA) Commercial Indoor approved.  The stove weighs less than four pounds and is a great and inexpensive way to ensure you can keep on cooking after the power goes out!  It can also be a useful on your next ice-fishing trip!

Ice Melter
We also carry two kinds of ice melter: HLF and Natural Choice.  HLF melts below -18°C, is coloured, won't harm vegetation or concrete, provides traction, won't harden, is water soluble for easy clean-up and is inexpensive.  Natural Choice melts to -24°C, is coloured, contains corrosion inhibitors, is safe for use around children and pets, is gentle on vegetation, and contains calcium magnesium acetate (CMA) which is a less corrosive alternative to road salt.

Astro-Turf® from Mattech is a premium product that will gather pounds of dirt from the soles of shoes keeping the entrance clean and tidy.  Its features include a raised surface that traps and holds debris; molded polyethylene blades which resist crushing, mildew and fading; and skid-resistant backing that withstands low temperatures.  It resists oil, grease, common acids/alkalis and salt.  It's great for exterior areas with heavy traffic over 1,500 person per day.

Chef Tim Hills

Chef Tim Hills has been the Executive Chef of Chartwells at Memorial University of Newfoundland and Labrador (MUN) for over 22 years.  Chartwells is a division of the food service company Compass Group Canada that specializes in College and University food service needs.

Chef Tim possesses training from the Marine Stewarding Program and Marine Cooking Program at the College of Fisheries in St. John's, NL and the Master Works Program at the Culinary Institute of America in Napa Valley, CA.  He also has a Commercial Baking Diploma and Interprovincial Red Seal Culinary papers from the Cabot Institute in St. John's, NL, as well as training in Advanced Food Safety and Standard and Advanced First Aid.  After working as a Chief Steward/Cook for Atlantic Container Lines and then Husky Marine for several years, Chef Tim decided to stick closer to home.  He began working for the Cabot Institute as operating Cafeteria Manager and Instructor of cake decorating, heart smart cooking, and microwave cooking.  After working at the college for a number of years, he then moved to Government House as Chef to the Lieutenant Governor of NL.  He began working at Memorial University as Executive Chef in the summer of 1990.

The culinary team at MUN provides food service to resident students as well as 5 retail food service units at MUN; over the past 22 years Chef Tim has served well over 8 million meals.  They also offer a full service of catering options to all MUN operations from the president's catering needs, weddings, and conferences to pizza parties for students.  Chef Tim has been purchasing from Big Erics (formerly Sani Pro Inc. in NL) for over 25 years.  "In my dealing with Big Erics we have had a great working relationship.  It's nice to see a local company who is interested in customer service and I hope this will not change," says Chef Tim.  The culinary team at MUN has made some major renovation purchases as well as replacing equipment as needed.  In the past couple of years, they've purchased 2 new Rational ovens, 2 new steam kettles and a great quantity of smallwares and cleaning products.  Currently, MUN is renovating Hatcher House, including Hatcher East, Pete's Place and a brand new bakery, with extensive new equipment supplied and installed by Big Erics.



On January 16th, Big Erics was presented with RATIONAL's Best Active Dealer of the Year Award!  We are the only dealer in Atlantic Canada to be granted this award for 2012.  For more information about this award, check out the story at our website!

Chef Tim's Spicy Cranberry Chutney

1/2 cup - Dried apricots, finely chopped
1 cup - Brown Sugar
1 cup - Raisins
1 cup - Water
6 cups - Fresh Newfoundland cranberries
2 ea - Granny apples, peel, core, chopped
2 tsp - Grated Lemon Zest
1/2 cup - Fresh lemon juice
1/2 cup - Grated fresh ginger
1 tsp - Spicy red pepper flakes

In a sauce pan, combine apricots, brown sugar, raisins and water.  Bring to a boil.  Reduce heat to a simmer, simmer and stir 5 minutes. Stir in cranberries, apples and lemon zest.  Simmer 10 minutes more or until cranberries burst and thicken.  Stir in lemon juice, ginger, and pepper flakes and let simmer 5 more minutes.  Remove from heat and refrigerate until needed.
