The Calabrese Brothers of Calabrese Holdings group present a brand new bar and restaurant concept launching in London, E1. Spear-headed by bar and restaurant entrepreneurs Gerry & Jon Calabrese (Wringer & Mangle, The Hoxton Pony, Hoxton Gin), The Holy Birds will be a unique dining experience, inspired by the 1960’s London music & art scene and the city's only restaurant to specialise in poultry. In a first for The Calabrese Brothers, legendary bartender Salvatore Calabrese will collaborate with his sons to create an extensive cocktail menu for the new venture. The Holy Birds will be set on the historic Petticoat Lane Market, over two floors with restaurant, bar, lounge and private dining rooms against the backdrop of a meticulously-designed interior, inspired by the 60s Danish modernist movement. Upstairs The Holy Birds restaurant will be London's first dining experience specialising in poultry, offering a mouthwatering menu of locally-sourced, free-range birds including everything from chicken, duck and grouse to wood pigeon, quail and pheasant.

Downstairs a cocktail lounge will offer late-night refreshment, decorated with a mix of original mid-century furnishings and bespoke design. A state-of-the-art sound system for renowned DJs and occasional live performers to provide the soundtrack inspired by the era. In a meeting of minds and for the first time ever, The Calabrese Brothers will collaborate with their father, Salvatore Calabrese. Having started working in the bar industry in the 60s, 'The Maestro' himself has designed an extensive 
menu of authentic cocktails from the time to put The Holy Birds firmly on the map of London's drinking scene.

The Holy Birds is the collaborative brainchild of Gerry Calabrese, Managing Director of Calabrese Holdings and Jon Calabrese, Head of Operations for the company. Between them The Calabrese Brothers are responsible for the incredibly successful Hoxton Gin, award-winning The Hoxton Pony in Shoreditch and more recently Wringer and Mangle, a neighbourhood restaurant and 720 capacity music venue in London Fields. 

Speaking about the new launch Gerry Calabrese says"Our ambition is to create a restaurant and cocktail destination that celebrates the incredible cultural decade of the 60s, whilst bringing it to the forefront of 21st century dining with our own modern day twist. We have meticulously designed a space that people will love not only for the food, that showcases poultry at its best, but the incredible cocktail and drinks menu that we have crafted with our father, the soundtrack that celebrates the 60s, and a setting that harks back to a more free-spirited time. We're thrilled to be opening The Holy Birds doors this November." 

Jon Calabrese adds"Although Gerry and I have worked together on a multitude of projects, this will be only the second time we will be collaborating on a launch, for what will be London's only poultry specialists. Set on the famous Petticoat Lane, a place that has strong family ties for us both, we are hugely excited by what's to come over the next few months. We've brought together our expertise in mixology, hospitality and events to create something very special."
