Meet Shelley

Meet Shelley! Shelley has been in the service industry for over 20 years. You might remember her from Fire Food & Drink, where she worked for many years. She has also worked at several Michelin Star restaurants in Chicago and is currently studying for her Certified Sommelier. A fun fact about Shelley: She is a trained opera singer!

Here's what Shelley has to say about her pick of the week, Le Domaine d’Henri “Troesmes” Premier Cru Chablis:

“Even in winter I like to drink a beautiful, high acid white. The Laroche family has been making wine in Chablis since 1850. These Premier Cru sites are close to the Grand Crus and offer a really amazing influence from the Kimmeridge clay soils. Kimmeridge clay is made up of fossilized oyster shells, which gives the wine a flinty, saline character and is why Chablis pairs so well with oysters! I really love that Chablis gives a very natural expression of Chardonnay- unoaked, tart, with green apple notes. Basically, what Chardonnay is if you don’t mess with it. Chablis is a highly terroir driven wine.” -Shelley
